Zuppa Toscana Italian Soup

Recipe quantity:  6 cups | Servings: 4 | Prep time: 10 minutes | Cook time: 30 minutes

Ingredients:

12 oz Italian sausage, chopped

2 cup kale, chopped

1/2 sweet onion, diced

6 slices bacon, diced

2 garlic cloves, minced

3 1/2 cup chicken broth

3/4 cup heavy cream

1/2 tsp sea salt

1 tsp black pepper

Directions:

1. In a large skillet over medium-high heat, brown the sausage for about 7 - 9 minutes, until cooked through. Drain any fat from the pan and set sausage aside.

2. In a large dutch oven over medium heat, add the diced bacon and cook for 5 - 7 minutes, until cooked through. Drain any fat from the dutch oven.

3. Add the onions and garlic and sauté for 3 - 5 minutes.

4. Add the chicken broth, salt and pepper and bring to a boil over high heat.

5. Add the chopped kale and return the sausage to the pan. Simmer for 2 - 3 minutes, until kale is tender.

6. Add the heavy cream and heat through.

7. Serve, and enjoy!
