Grilled Chicken Salad with Lemon Dijon Dressing

Recipe quantity:  4 cups | Servings: 2 | Prep time: 2 hours 10 minutes | Cook time: 1 hour

Ingredients:

12 oz boneless, skinless chicken breast

3 cup mixed salad greens

1 cup mint leaves

1/2 cup cucumbers, sliced

1/2 cup cherry tomatoes, sliced

3/4 cup extra virgin olive oil

6 Tbsp lemon juice

2 Tbsp dijon mustard

2 Tbsp shallots, minced

4 tsp garlic, minced

1 tsp salt

Directions:

1. Create the marinade by whisking together ¼ cup extra virgin olive oil, 2 Tbsp lemon juice, and 3 tsp minced garlic.

2. In a large bowl, pour the marinade over the chicken, and refrigerate for 2 hours.

3. Preheat the grill to medium-high heat.

4. Remove chicken from the marinade and grill, turning often, until internal temperature reaches 165 degrees F (about 20 to 25 minutes for chicken breasts). Let cool and refrigerate until ready to serve.

5. Just before serving, slice chicken breasts into thick slices.

6. Whisk together remaining oil, lemon juice, minced garlic, minced shallot, dijon mustard, salt, and chopped mint in a medium bowl.

7. Arrange mixed salad greens, cherry tomatoes, and sliced cucumber on a large serving platter. Toss chicken in dressing and arrange on salad.

8. Pour remaining dressing over salad, then serve. Enjoy!
