Recipe quantity: 3 cups | Servings: 3 | Prep time: 25 minutes | Cook time: 20 minutes
Ingredients:
1 lb prime rib
1 can, cut green beans
1/2 cup beef broth, unsalted
3 1/2 Tbsp butter, salted
1/2 Tbsp almond flour
2 cloves garlic
1/2 Tbsp fresh rosemary
1/2 Tbsp fresh thyme
salt and pepper to taste
Directions:
1. Pre-heat oven to 325 degrees F.
2. Mix together the butter, garlic, herbs, salt, and pepper in a bowl until evenly combined.
3. Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.
4. For medium rare, bake for 17 - 20 minutes. During this time open the green beans and sauté for about 5 minutes or until desired doneness, set aside.
5. Remove the roast from the pan and pour the pan drippings into a saucepan over medium heat.
6. Add the almond flour, whisking until there are no lumps, then add the beef broth, stirring and bringing the sauce to a boil.
7. Remove from heat and strain the sauce into a gravy dish.
8. Carve the prime rib into 3 slices. Serve with green beans.
