Egg, Spinach, and Bacon Breakfast Casserole

Recipe quantity:  12 cups | Servings: 12 | Prep time: 10 minutes | Cook time: 50 minutes

Ingredients:

1 spray avocado oil spray

12 eggs, large

10 oz frozen spinach, thawed, drained and chopped

8 oz bacon

1 cup cheddar cheese, shredded

4 oz cream cheese

1 cup heavy cream

Salt and pepper to taste

Directions:

1. Preheat the oven to 350 degrees F.

2. Place the bacon strips in a cold pan. Cook the bacon low and slow, flipping and turning to help it brown evenly. When the bacon is crisped to your liking, transfer to paper towels to drain.

3. In a large bowl, whisk the eggs, spinach, heavy cream, salt, pepper, and just ½ cup of the cheddar cheese.

4. Spray a 9 x 13 inch casserole dish with cooking spray. Pour the egg mixture into the casserole dish.

5. Slice the cream cheese into cubes and add it to the casserole dish. Bake for 35 minutes.

6. Remove the casserole dish from the oven and top it with the rest of the cheddar cheese and bacon.

7. Bake for another 15 minutes, or until the center is cooked through.
