Chocolate Chia Pudding with Almond Milk and Stevia

Recipe quantity:  2 cups | Servings: 4 | Prep time: 1 hour 10 minutes

Ingredients:

1 cup almond milk, unsweetened

1/4 cup chia seeds

2 Tbsp unsweetened cocoa powder

1 tsp stevia maple syrup

1/4 tsp vanilla extract

1/8 tsp cinnamon powder

Directions:

1. Combine everything, except for the chia seeds and toppings of choice, in two mason jars with a whisk.

2. Add in the chia seeds evenly to both jars, cover the jars and give them a good shake. Let it settle and sit for a few minutes and then shake them again. Continue this pattern of shaking and waiting until the chia seeds start to absorb the liquid and expand. They will look evenly dispersed through the liquid when it's ready to set in the fridge.

3. Give everything one final shake and transfer to the fridge overnight to set. The pudding should be ready in about 1 hour if you need a quicker option.

4. When you're ready to eat, layer on your choice of  toppings and enjoy!
