Chicken Parmesan

Recipe quantity:  6 cups | Servings: 6 | Prep time: 10 minutes | Cook time: 40 minutes

Ingredients:

1 spray avocado oil cooking spray

6 skinless, boneless chicken breasts

1 egg, large

1 cup parmesan cheese

6 oz mozzarella cheese

1 cup marinara sauce

2 garlic cloves, minced

1/2 Tbsp dried parsley

1/2 Tbsp dried basil

1 1/2 tsp dried oregano

1 pinch table salt

1/4 tsp black pepper

Directions:

1. Preheat oven to 400 degrees F. Line a large baking sheet with foil and spray with avocado oil spray.

2. Beat egg in one small wide bowl. In a second bowl combine the parmesan cheese with the garlic, parsley, basil, oregano, salt, and pepper. Mix until well combined.

3. Dip each piece of chicken in the egg and then the cheese, coating both sides. Place on a prepared baking sheet. Bake for 30 minutes.

4. Top each piece with sauce and then shredded mozzarella. Bake for another 10 - 20 minutes until the chicken reaches 165 degrees F when checked with a meat thermometer and the cheese is melted and bubbly.

5. Serve, and enjoy!
